stuffing...

1 jar apricot preserves
1 block cream cheese
3 cups grated MJ cheese
3 cups ricotta cheese
3 Tblsp vanilla
1 cup sugar

Combine in mixer

 

preparation...

Cut one loaf of egg bread into 5 slices. Cut each slice down the center half way for stuffing. Scoop 1/4 cup of filling into each pocket.

Dip in french toast batter and roll in favorite granola.

Refrigerate placing parchment/wax paper in between pieces.

When ready to use spray a griddle on low heat and cook till each side is brown. I like to cover with a sauce pan lid to make the centers piping hot.
